Ingredients
- 2 ears of fresh corn
- 1 ripened mango, diced
- 1 sweet red pepper, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro or flat leaf parsley, roughly chopped
- 1/2 the juice of 1 lime
- Salt to taste (optional)
Directions
- Grill the 2 ears of corn and turn, allowing them to get grill marks. Set aside to cool.
- Combine the diced mango, diced pepper, 1/2 cup onion, 1/4 cup cilantro or parsley in a bowl.
- Cut the kernels off the cob and combine into the bowl with the mango mix.
- Squeeze the juice of 1/2 a lime into the mixture. Stir to combine. Salt to taste (optional).
- Refrigerate and serve chilled.
